Ingredients:
- 4 cups dried, poached chicken breast
- 1 cup mayonnaise
- 1 stalk sliced celery (1/4 inch slices)
- 1 small yellow onion finely chopped (should equal to about 1/3 cup)
- 2 teaspoons lemon juice
- 1 teaspoon fresh dill (optional)
- 1 teaspoon parsley (optional)
Chop chicken into bite sized pieces.
Slice the celery into 1/4 inch pieces.
Finely chop small yellow onion.
Add all ingredients to a salad bowl and mix thoroughly.
Eat on crackers or as a sandwich (really good with Grey Poupon Country Dijon)
